Question: No headphone jack on tv (xbox question)?

I've recently really got into gaming and it's become apparent to me that to get the most out of the experience using a set of headphones will allow you to hear better and be more aware (such as being able to hear the footsteps on enemies on mw2). Well here's my problem, my tv has no headphone jack! What I did was I bought a RCA to female headphone jack (i'll put the link to the exact cable at the end) thinking that if I plugged them into the audio out on my tv (i'll also include a link to that) and then connected the headphones the sound would play through that, however it's not the case. It's become obvious to me now that the reason for this is that they are on different channels. My xbox uses my HDMI channel and a use a HDMI cable to connect it, rendering my RCA to headphone jack useless (as it will connect to the component or SCART channels). The thing is, people report this method working, so am I doing something wrong? Is there any way for me to get my HD quality picture and still use my audio- out sockets to play sound through my headphones? I understand this is a big question but I would REALLY appreciate a response. Thanks a lot!
